The ancestor of the lemon – a true rarity from Sicily.
Origin & variety: The Cedro (citron, Citrus medica) is not a hybrid but one of the three original citrus species – cultivated in the Mediterranean since antiquity. Its thick white pith (albedo) is edible!
Taste: Mildly floral and delicately aromatic, hardly sour at all; the peel is pleasantly mild and slightly sweet. Sliced wafer-thin with olive oil and salt, it is a Sicilian delicacy – and the basis for real candied citron peel.
Sweetness: ●●○○○ mild (3/10) – but unique in aroma
